Bombay Mahal Restaurant is not the oldest authentic restaurant in Boston, but it's certainly one of the most daring and provocative. Our head chef's background is primarily traditional Indian cuisine, but after some serious reflection he realized that Boston was lacking a truly innovative Indian Bistro. His challenge was how to hold on to the foundations of authentic Indian food while presenting a combination of old and new. Bombay Mahal turned out to be the solution to this challenge.
